This salad is perfect on the go. You can prepare it the day before.
Ingredients for the rainbow effect (you can also use similar ingredients depending on the season)
Red camargue rice (or quinoa or couscous)
2 tbsp Balsamico vinegar
1 tbsp water
1 tsp mustard
2 tsp maple syrup
5 tbsp olive oil
Wash and cut all ingredients for the salad and fill them in rainbow layers into a jar. Mix all ingredients for the vinaigrette, add the oil at least and stir again. Keep the vinaigrette in a separate jar and add it to the salad just before serving.
