Protein Pasta with Avocado Cream

Recipe:

Makes 2 servings

200g soy fettuccine (made from black soy beans, I used Delysoy)

Sauce:

2 avocados

6 medium tomatoes

1 onion

Italian herbs

Salt, pepper

Black sesame

 

Method:
Cook the fettuccine according to the pack instructions. Grill 4 tomatoes in the oven. Roast the onion in olive oil. Blend the onion with the avocados, the other 2 tomatoes and the herbs, salt and pepper into a creamy sauce. Serve with the grilled tomatoes on top and sprinkle with black sesame.
