Carrot cake

 

Recipe:

Ingredients Cake:

250g grated carrots

4 chia eggs (4 tbsp chia seed + 10 tbsp of water, I always ground them in the vitamix but you can also use them as a whole)

250 g wholemeal flour

200 g grounded hazelnuts

100g rice syrup or sweetener of choice

2 tbsp baking powder

150g oil

100ml vegetable milk

1 tbsp cinnamon

Ingredients Ganache:

1 can coconut cream (only the solid part of the can)

400 g silken tofu

100g cocoa butter (melted)

3 tablespoons of coconut oil

50g rice syrup

50 g of grated coconut

Let the chia seeds or the grounded chia seeds soak in water for at least 10 minutes. Blend all ingredients for the cake and pour the dough into a greased cake form. Bake at 350 degrees Fahrenheit for about 30 minutes. Let it cool down.

Blend all ingredients for the ganache and pour them on top of the cake. Let set in the fridge for at least 2 hours. Enjoy.
