1/4 cup flaxseeds
1/4 cup water
1 cup oats1 cup flour4 tbsp lucuma powder
1 zucchini1/2 cup soy milk
1/4 cup olive oil
2 tbsp baking powder1 tsp bourbon vanilla
1 hand full walnuts, coarsely chopped
1/2 cup raspberries
1/4 cup maple syrup
Topping: vegan creamcheese, erythritol or sweetener of choice, vanilla, acai powder or berry puree.
Blend flaxseeds into a flour and mix well with water. Leave it to soak for 10 minutes. Blend oats into a flour and combine with all dry ingredients. Blend zucchini, milk, syrup and raspberries and combine dry and wet mixtures. Add the walnuts. Pour into muffin forms and bake at 350 degrees Fahrenheit/ 180 degrees celsius for about 30 minutes.
The frosting is vegan cream cheese combined with acai powder, erythritol/sweetener and bourbon vanilla. Enjoy!
