Bento Box: Sandwich, Bliss Balls, Lentil Salad

1. Coconut Cashew Bliss Balls:

50 g cashews
25 g coconut milk
25 g almonds
30 g dates
30 g grated coconut
Blend all ingredients except for the grated coconut in a powerful blender. Form the balls and roll them in the grated coconuts. You can prepare the Bliss Balls in advance and keep them in the fridge for several days.

2. Beetroot-Lentil Salad:

40 g beluga lentils (cooked)
20 g beetroot
1/2 apple
1/2 carrot
1/4 red pepper
1/8 cucumber
1 date
1 small potato (cooked)
A few leaves coriander
Mix all ingredients. You can prepare this salad one day in advance.

Vinaigrette:
2 tbsp olive oil
1 tbsp apple vinegar
1 tsp mustard
1 tbsp water
Salt, pepper
Parsley
1 tsp rice syrup

3. Sandwich:

2 slices wholemeal bread
2 lettuce leaves
Hummus
1 tomato
1 burger
Spread hummus on both slices of the bread and place all other ingredients between the two slices.
