Veggie Burger



Ingredients (makes 6 burgers)


1 cooked beetroot
1 zucchini
1/2 cup oats
1 oignon
2 tbsp almond flour
2 tbsp sunflower seeds
1 tsp mustard
1 tsp ground cumin seeds
½ tsp ground coriander
ground chili to taste
½ bunch of parsley
Salt, pepper


6 buns
2 ripe avocado
1 zucchini
2 carrots
2 hand full rucola
6 tbsp hummus


1 sweet potato (optional, you can omit or replace it)
1 tbsp olive oil
1 can chickpeas (cooked)
3 tbsp tahini
1 garlic clove
juice of 1/2 lemon
Salt, pepper, cayenne, ground pepper, ground cumin, coriander


Hummus: Slice sweet potato, place slices next to one another on a baking tray covered with baking paper or oiled. Bake 15-20 minutes at 390 degrees Fahrenheit. Blend up all ingredients into a hummus.

Patties & Burger: Blend all ingredients for the patties. Divide into 6 parts (or more if you want smaller patties). Place in the fridge for 30 minutes. Slice carrots, zucchinis and avocado. Fry zucchini for just a few minutes. Fry the patties on both sides in a greased pan, 2-3 minutes each side. Slice the buns, place the bottom of the buns on plates. Spread a layer of hummus on the bun. Top with burger, sliced veggies and rucola. Spread more hummus on top. Enjoy.

If you made too many patties, you can easily freeze them for a quick snack or meal.
