Veggie Pizza with Chickpea Crust and Kale PestoIMG_0977


2 ½ cups chickpeas (cooked)
½ cup oats
½ cup wholegrain spelt flour
¾ cup silken tofu
9 tbsp olive oil
1 tsp salt

Kale pesto:
1 hand full kale
½ bunch of basil
3 tbsp olive oil
5 tbsp pine nuts
1 small onion
½ clove of garlic


Blend oats to a flour, add all other ingredients and blend into a dough. Place on a baking sheet lined with parchment paper. Lay a second sheet of parchment on top of the dough and roll out the dough. Bake for 15 minutes at 390 degrees Fahrenheit. Heat olive oil in a pan and roast onions, garlic and pine nuts. Blend all ingredients into a pesto. Spread pesto on top of the pizza and top with the veggies. Bake again for 5 minutes or eat it with raw toppings.
