Makes 4 servings
4 tbsp chia seeds
200ml almond milk
4 tbsp coconut yogurt or cream cheese
4 tbsp fresh fruit puree
250g brown rice
800ml almond milk
250g soy yogurt
Cherries, raspberries, currants or other fresh fruits
Mix chia seeds with milk and let it soak for at least 30 minutes or overnight. Add yoghurt and fresh fruit puree.
Add rice, vanilla bean, salt and 1 cup of milk into a saucepan. Cook over low heat, stirring occasionally, until the milk is absorbed, about 5 minutes. Gradually add 5 more cups of almond milk, about 1/2 cup at a time. Let the milk absorb before adding more. After 25 minutes, the rice pudding will be thick and creamy. Let cool, and stir in the last cup of milk. Remove vanilla bean and spoon into a pretty glass, add a layer of cherries or other fresh fruits. Top with chia yoghurt cream, more fresh fruits and coconut chips.
